Bikini Recipe

Makes enough for 10 servings

To make the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Drink (yields 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Combine all the ingredients into a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Next, take off the stove and leave to cool down fully. Transfer into a sealable bottle, close it and store in the refrigerator, where it will keep for about a month.

To make Cocktail Base: Pour all the liquids in a large bottle, let it rest for 60 minutes, then pass it through best through cheesecloth, so it's completely strained.

When ready to serve: Pour 85ml of the cocktail base into your stirring glass packed with ice, gently stirring gently for about 60 seconds to chill. Pour into a chilled martini glass or equivalent, top with the cranberries and complete it with a brief mist of mandarin oil over the drink.
